- Asparagus pesto
6 oz (170.1 grams) asparagus, boiled until fork tender
ยผ cup parmegiano regianno
ยผ cup olive oil
1/3 cup pecans
1 clove garlic
Zest of one lemon
Pepper to taste
- Pasta
Pasta of your choice
Shredded parmegiano regianno to taste
2 tbsp olive oil
(Optional) 1 cup cherry tomatoes, halved
Directions
- Boil the pasta according to the package
- Drain the pasta and keep 1/2 cup of the water
- In a blender add all the pesto ingredients and blend until smooth
- In a pot heat up 2 tbsp olive oil and add the pasta, along with the pesto, tomatoes and reserved water
- Turn off the heat and stir well until well incorporated
