15 min delicious asparagus pesto pasta

Ingredients

  • Asparagus pesto
  • 6 oz (170.1 grams) asparagus, boiled until fork tender

  • ¼ cup parmegiano regianno

  • ¼ cup olive oil

  • 1/3 cup pecans

  • 1 clove garlic

  • Zest of one lemon

  • Pepper to taste

  • Pasta
  • Pasta of your choice

  • Shredded parmegiano regianno to taste

  • 2 tbsp olive oil

  • (Optional) 1 cup cherry tomatoes, halved

Directions

  • Boil the pasta according to the package
  • Drain the pasta and keep 1/2 cup of the water
  • In a blender add all the pesto ingredients and blend until smooth
  • In a pot heat up 2 tbsp olive oil and add the pasta, along with the pesto, tomatoes and reserved water
  • Turn off the heat and stir well until well incorporated
