9 veggie one pot pasta Bolognese

Ingredients

  • 2 pounds (0.91 kilograms) grass fed ground beef

  • 1 zucchini

  • 1 carrot

  • 1 onion

  • 2 cloves garlic

  • 1/3 cauliflower head

  • 1 red bell pepper

  • 6 oz (170.1 grams) baby mushrooms

  • 1 cup frozen peas

  • 1 cup frozen corn kernels

  • 4 1/2 cups tomato puree

  • 4 1/2 cups warm water

  • ½ pound pasta (I used chickpea pasta)

  • 3 tbsp olive oil

  • Spices (1 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp turmeric, 1/4 tsp nutmeg, salt and pepper)


Directions

  • Chop all your washed veggies except the peas and corn and blend in your blender. You might need to do this in batches if your blender is small.
  • In a pot, warm up your olive oil and add the spices. Stir until fragrant
  • Add the ground meat and break down with a wooden spoon. Cook until it changes color
  • Add the blended veggies and stir well
  • Add the pureed tomato and water and cook for 22 min covered
  • Add the corn, peas and pasta. Stir and cook for 7-8 min (depend on the pasta). You may need to add 1/2 cup of warm water
