Baby friendly apple and banana muffins

2 medium sized bananas, mashed (150 gr)
2 apples, shredded (230 gr)
2 eggs
¼ cup milk of choice (60 gr)
¼ cup coconut oil, melted (55 gr)
1 ¼ cup oat flour (125 gr)
¼ tsp cinnamon
1 tsp baking powder
(Optional) pinch of cloves
(Optional) 2 tbsp walnuts, crushed – for babies make sure that you ground to flour consistency
(Optional) Rolled oats to top the muffins
Directions
- Preheat your oven at 370F and grease a muffin tin
- In a mixing bowl add the eggs, milk, mashed banana and coconut oil and whisk it up to incorporate
- Add the shredded apples, cinnamon, cloves and walnuts and mix
- Add the flour and baking powder and mix to incorporate
- Divide the batter in the muffin tin and top with the oats
- Bake for 25 min or until golden brown
