Baby friendly apple and banana muffins

Ingredients

  • 2 medium sized bananas, mashed (150 gr)

  • 2 apples, shredded (230 gr)

  • 2 eggs

  • ¼ cup milk of choice (60 gr)

  • ¼ cup coconut oil, melted (55 gr)

  • 1 ¼ cup oat flour (125 gr)

  • ¼ tsp cinnamon

  • 1 tsp baking powder

  • (Optional) pinch of cloves

  • (Optional) 2 tbsp walnuts, crushed – for babies make sure that you ground to flour consistency

  • (Optional) Rolled oats to top the muffins


Directions

  • Preheat your oven at 370F and grease a muffin tin
  • In a mixing bowl add the eggs, milk, mashed banana and coconut oil and whisk it up to incorporate
  • Add the shredded apples, cinnamon, cloves and walnuts and mix
  • Add the flour and baking powder and mix to incorporate
  • Divide the batter in the muffin tin and top with the oats
  • Bake for 25 min or until golden brown
