3 bananas
3 eggs
1/3 cup milk (75 gr)
1/3 cup olive oil (75 gr)
1 1/2 cup whole wheat flour (210 gr) + 1 tbsp
2 tap baking powder
1/2 cup strawberries, diced
1 tap vanilla extract
Directions
- Preheat your oven at 365F (185 degrees Celsius) (185 degrees Celsius (365 degrees Fahrenheit)) and grease a baking muffin tin
- In a mixing bowl, mash the bananas
- Add the eggs to whisk until fluffy
- Add the olive oil, milk and vanilla extract and whisk to incorporate
- Add the baking powder and flour and mix to incorporate. Do not over mix
- In a separate bowl add the diced strawberries and 1 tbsp flour and mix
- Fold in the diced strawberries
- Place the batter in your muffin tin and bake for 30 min or until a toothpick comes out clean
