Ingredients

  • 6 eggs

  • ¼ cup milk (60 gr)

  • ¼ cup cheddar, shredded (30 gr)

  • 1½ cup veggies, thinly sliced (I used kale, onion, carrot, tomatoes)

  • 2 tbsp olive oil

  • 1 tsp oregano

  • Pepper to taste


Directions

  • Preheat your oven at 370F (187.78 degrees Celsius) and line your muffin tin with silicon cups
  • In a mixing bowl whisk the eggs with the milk, oregano and pepper
  • Add the shredded cheese and mix
  • In a pan sauté the veggies with the olive oil until soft and let them cool for 5 min
  • Add the sautéed veggies in your egg mixture and mix
  • Fill up the muffin tin and bake for 22-25 min or until golden
