6 eggs
ยผ cup milk (60 gr)
ยผ cup cheddar, shredded (30 gr)
1ยฝ cup veggies, thinly sliced (I used kale, onion, carrot, tomatoes)
2 tbsp olive oil
1 tsp oregano
Pepper to taste
Directions
- Preheat your oven at 370F (187.78 degrees Celsius) and line your muffin tin with silicon cups
- In a mixing bowl whisk the eggs with the milk, oregano and pepper
- Add the shredded cheese and mix
- In a pan sautรฉ the veggies with the olive oil until soft and let them cool for 5 min
- Add the sautรฉed veggies in your egg mixture and mix
- Fill up the muffin tin and bake for 22-25 min or until golden
