Delicious and easy broccoli, butternut squash and beans salad

Ingredients

  • ½ butternut squash, in cubes

  • 1½ cups boiled black beans until fork tender

  • 1½ cups broccoli, cut in florets and boiled

  • 1 cup boiled chickpeas until fork tender

  • 1 cup boiled back-eyed beans until fork tender

  • 1 tsp cumin

  • 4 tbsp olive oil

  • 2 tbsp chopped cilantro


Directions

  • Preheat the oven at 375F (190.56 degrees Celsius) and line a sheet tray with parchment paper
  • Place the butternut squash in the sheet tray and drizzle with 2 tbsp of olive oil
  • Cook for 30-35 min or until fork tender
  • In a mixing bowl add the butternut squash cubes along with the rest of the ingredients

  1. This recipe sounds delicious! How much broccoli do you use? Also, is it cooked or raw? I don’t see broccoli listed in the recipe so just wondering.
