Delicious and easy broccoli, butternut squash and beans salad

ยฝ butternut squash, in cubes
1ยฝ cups boiled black beans until fork tender
1ยฝ cups broccoli, cut in florets and boiled
1 cup boiled chickpeas until fork tender
1 cup boiled back-eyed beans until fork tender
1 tsp cumin
4 tbsp olive oil
2 tbsp chopped cilantro
Directions
- Preheat the oven at 375F (190.56 degrees Celsius) and line a sheet tray with parchment paper
- Place the butternut squash in the sheet tray and drizzle with 2 tbsp of olive oil
- Cook for 30-35 min or until fork tender
- In a mixing bowl add the butternut squash cubes along with the rest of the ingredients
This recipe sounds delicious! How much broccoli do you use? Also, is it cooked or raw? I don’t see broccoli listed in the recipe so just wondering.
