Delicious Greek calamari spinach risotto

Ingredients

  • 2 pound (0.91 kilograms)s calamari, cut in rings

  • 2 leeks, diced

  • 6 spring onions, diced

  • 1 small carrot, diced

  • 1/2 onion, diced

  • 1 garlic clove, minced

  • 1 tbsp butter or ghee

  • 2 tbsp olive oil

  • 1/2 pound (0.91 kilograms) leafy greens (spinach, kale, beet leaves etc)

  • 1/4 cup dill, chopped

  • 1/4 cup mint, chopped

  • Zest of a lemon

  • Pepper

  • 2 cups brown rice, cooked


Directions

  • In a sauce pan, sauté on medium hear the calamari in the ghee and olive oil for 2-3 min
  • Add the garlic, onion, carrot, leeks and green onions and sauté for 2-3 min
  • Add the lemon zest and herbs
  • Add the leafy greens and sauté until wilted
  • Add 1-2 cups of water and let simmer for 5 min covered
  • Add the cooked rice, pepper and lemon juice and serve
