4 Ingredients only! Yes, it is doable and delicious! But I must warn you that those are addicting. Delicious homemade healthy goldfish cheese crackers, made with wholesome ingredients. The process is very simple, just prepare the double in the blender, roll it out and cut cute little goldfish (or any other that you like) shapes with your vegetable cutters*. Let’s get into cooking the best snack ever, shall we?

What you will need

  • Cheddar cheese. This is the cheese that I had on hand but you can use any sharp or semi-sharp yellow cheese that you want. When I pick my cheese I try to stick to simple ingredients without additives and colors.
  • Flours. I uses a combination of whole wheat flour and chickpea flour. You can use only whole wheat or even all purpose flour. I love to use chickpea flour when I can to boost the protein intake.
  • Coconut oil. If you follow me on social media, you should know by now that I love to add coconut oil in my recipes. I believe that you can use grass-fed butter instead but I haven’t tried it. I would not use olive oil or any other oil in liquid form as the consistency would be different.

Tips to perfection

  1. Let them cool completely before you store them in an airtight container.
  2. You can store in your counter in the airtight container for up to 3 days and they will remain crispy and delicious. But I guarantee that they will not survive that much!
  3. You can cut in any shape that you want using vegetable cutters. Those delicious homemade healthy goldfish cheese crackers don’t expand so feel free to cut into your little one’s favorite shape. If you pick bigger cutters keep in mind that the cooking time will increase. Also if you use multiple shapes keep in mind that they need to be approximately the same size so they cook evenly.

Ingredients

  • 2 cups (8 oz (226.8 grams)) sharp cheddar cheese shredded

  • 1/2 cup whole wheat flour

  • 1/2 cup chickpea flour

  • 1/4 cup solid coconut oil

  • 1-2 tbsp cold water if needed

Directions

  • Preheat the oven at 360F (182.22 degrees Celsius) and line a baking sheet with parchment paper.
  • In a blender add the shredded cheese, flours and coconut oil and pulse to incorporate well
  • Transfer to a bowl and add cold water one tablespoon at the time until you form a dough.
  • Place the dough in between two pieces of parchment paper and roll the dough with your rolling pin.
  • Cut the dough with any vegetable cutter* that you like and place the cutouts in the baking sheet.
  • Bake for 14-16 min until golden brown and crispy.
