Delicious pumpkin and spinach savory pancakes

1/2 cup pumpkin puree
3 eggs
1/3 cup flour (regular all purpose or oat)
1 handful of spinach, finely chopped
1/3 cup feta cheese, crumbled
1 tsp baking powder
pepper to taste
Directions
- In a mixing bowl, beat the eggs with a whisk
- Add the pumpkin puree, and feta cheese and mix to incorporate
- Add the spinach, flour, baking powder and pepper and mix to incorporate and set the bowl aside
- Grease your non stick with a little bit of coconut oil or butter and place two spoonfuls of the batter per pancake
- Cook over medium to low heat until the batter forms small bubbles for a couple of minutes
- Turn and cook on the other side
- Make sure that you will not overcrowd your pan
