Delicious pumpkin and spinach savory pancakes

Ingredients

  • 1/2 cup pumpkin puree

  • 3 eggs

  • 1/3 cup flour (regular all purpose or oat)

  • 1 handful of spinach, finely chopped

  • 1/3 cup feta cheese, crumbled

  • 1 tsp baking powder

  • pepper to taste


Directions

  • In a mixing bowl, beat the eggs with a whisk
  • Add the pumpkin puree, and feta cheese and mix to incorporate
  • Add the spinach, flour, baking powder and pepper and mix to incorporate and set the bowl aside
  • Grease your non stick with a little bit of coconut oil or butter and place two spoonfuls of the batter per pancake
  • Cook over medium to low heat until the batter forms small bubbles for a couple of minutes
  • Turn and cook on the other side
  • Make sure that you will not overcrowd your pan
