Dinosaur banana pancake sandwiches

Pancakes are always a safe option for breakfast as usually kids love them. However the store bought mixes are often full of refined sugars and preservatives. This is a much healthier approach using a handful of ingredients that most probably have in your pantry and fridge.

What you will need

  • Eggs. I usually use large eggs for my recipes. If you have only small or extra large eggs then you need to adjust how many you use so the final consistency of the batter is correct
  • Bananas. i used medium sized.
  • Almond flour. You could use any flour that you want, all purpose, whole wheat, oat flour works well in this recipe. I have tried with all those variations and it works great. If you want to use coconut flour, the pancake will be more delicate so be aware, however it is possible.
  • Oil to grease the pan. Coconut oil or ghee works the best.
  • Almond butter. This is my favorite nut butter but feel free to use any nut or seed butter that you like. Just be sure that the only ingredient in the label is nuts or seeds without added oils, refined sugars or preservatives.
  • Shredded coconut

Tips

  • Cookie cutter. Well of course you can make those sandwiches without cutting in a cute shape. Just make the pancakes in the regular circle shape. BUT anything cut with a cookie cutter taste better, right? Yes, this is right for toddlers/kids!
  • Instead of the almond-coconut spread you can use any healthy spread that you like. Great combination will be a healthy chocolate hazelnut spread.
  • Serve with a side of fruit and vegetable to boost the vitamin intake and the carbohydrates that a little person (and everyone pretty much) needs in the morning.

Ingredients

  • Pancakes
  • 4 eggs

  • 2 bananas

  • 2 tbsp almond flour

  • coconut oil to grease the pan

  • Almond – coconut spread
  • 4 tbsp almond butter

  • 1 tsp coconut oil melted

  • 1 tsp honey

  • 1 tbsp shredded coconut

Directions

  • Almond – coconut spread
  • Stir all ingredients in a small mixing bowl
  • Dinosaur sandwiches
  • Place all ingredients – except the coconut oil – in your blender and blend for a minute
  • Over medium heat, grease the pan and place 2-3 tbsp of butter per pancake
  • Let cook for one side and flip. Be gentle as those tend to brake easier than the “regular” pancakes
  • Cut with a cookie cutter
  • Spread the coconut-almond spread on one pancake and cover with another pancake
