Crustless spinach and feta pie

  • 6 oz baby spinach, washed and thinly sliced

  • 2 green onions, thinly sliced

  • 1 leek, thinly sliced

  • ¼ cup olive oil + 2 tbsp

  • 1 cup milk of your choice

  • 6 oz feta cheese, crumbled

  • 2 eggs

  • 2 tbsp dill, thinly chopped

  • 1 tbsp mint, thinly chopped

  • 1 tbsp parsley, thinly chopped

  • 3/4 cup all purpose flour

  • 3/4 cup whole wheat flour

  • 2 teaspoon baking powder

  • pepper to taste

  • 1 tbsp breadcrumbs


  • Preheat your oven at 360F
  • Place the spinach, leeks, green onions, mint, dill, parsley and the two tablespoons of the olive oil in a pot
  • Over medium heat stir well until the spinach has wilted, for about 5 min
  • Place aside to cool down a bit
  • In a mixing bowl, add the eggs, milk and olive oil and stir to incorporate
  • Add the feta cheese, pepper and the spinach mixture in the mixing bowl and stir well
  • Add the flours and baking powder and stir to incorporate
  • Grease your 11 inches x 8 inches baking sheet with olive oil and sprinkle with breadcrumbs
  • Add your batter and bake for 35-40 minutes or until golden brown
