Easy and fluffy orange cake with honey and olive oil

Ingredients

  • 3 eggs in room temperature

  • 1/2 cup honey (170 gr)

  • 1/2 cup milk (110 gr) in room temperature

  • 1/4 cup olive oil (60 gr)

  • 1/4 cup orange juice (60 gr)

  • 1 cup all purpose flour (150 gr)

  • 3/4 cup wholewheat flour (112 gr)

  • 1 tbsp baking powder (9 gr)

  • Zest of an orange + zest of a clementine

Directions

  • Preheat your oven at 365F (180C) and line a 9 inches x 5 inches (23 cm x 12 cm) loaf pan with parchment paper
  • In a mixing bowl, beat the eggs and the honey until very fluffy
  • Add the olive oil, milk, orange juice and zest and whisk
  • Add the flours and baking powder and whisk
  • Transfer the batter to the load pan and bake for 45-50 min or until golden and a toothpick comes back clean when you press it into the center of the cake
