Easy and fluffy shrimp pancakes


Do you want an easy meal ready within minutes? Those easy and fluffy shrimp pancakes are a great way to add more seafood into yours and your kids’ diet. Also they are perfect for baby led weaning as their texture is great for little fingers. You can serve them right away or even store in your fridge or freezer for when you want a quick meal. So let’s get started!

What you will need

  • Shrimp. The star of the show! But if you are not so much into shrimp, you can try the same recipe with any other seafood that you like, such as lobster meat, crab meat or scallops
  • Egg. You can consider those pancakes close to a denser omelet. I choose pasture raised eggs as I feel that the animals get treated better in the pastures. Feel free to use any eggs that you have on hand.
  • Vegetables. I used carrot, spinach and green onion but you can add other vegetables of your liking such as shredded squash, peas, corn.
  • Whole wheat flour. You can definetely make this with white flour and the texture is the same. Or you can use oat flour instead for a gluten-free version. Personally I prefer the whole wheat flour in this recipe as I feel that the pancakes taste the best but you can use the flour of your preference.
  • Aromatics. I wanted to add a little bit of Greek flavors so I added lemon zest and oregano.


If you don’t want to enjoy those pancakes right away then you can store them in an air-tight container in your fridge for up to three days or even freeze them in a freezer bag for up to three months. When you want to enjoy them, take them out from the freezer and defrost them over night in your fridge and you will have a meal ready to go at any time.

  • 8 oz (226.8 grams) shrimp, shelled and deveined

  • 3 eggs

  • ¼ cup milk

  • 1 small carrot, shredded

  • 1 green onions, finely chopped

  • 1 handful of spinach, finely chopped

  • 1/2 tsp oregano

  • 1 tsp baking powder

  • ¼ cup whole wheat flour

  • Pepper to taste

  • Zest of a lemon


  • Boil the shrimp until fork tender (for about 3 min)
  • In a mixing bowl, beat the eggs
  • In the same mixing bowl, add the milk, shredded carrot, chopped green onions, spinach, oregano, pepper and lemon zest and stir to combine
  • In your blender, blend the boiled shrimp until minced
  • Add the minced shrimp and flour in the mixing bowl and mix to incorporate
  • Lightly brush a non stick pan with olive oil and cook the pancakes over medium to low heat for around 2 min per side
  • Serve with a squeeze of lemon juice
