Those healthy carrot cake muffins are made with honey and they are so fluffy and easy to make, the perfect snack for kids lunchboxes.

Ingredients

  • 2 eggs

  • 1/3 cup olive oil (85 gr)

  • 1/3 cup milk of choice (85 gr)

  • 1/3 cup honey (120 gr)

  • 2 medium sized carrots, shredded

  • 1 1/3 cup all purpose flour (185 gr)

  • 1/3 cup oats (45 gr)

  • 1 tbsp baking powder (9 gr)

  • 1/3 cup walnuts, crushed (45 gr)

  • 1 tsp cinnamon

  • 1/4 tsp cloves

  • 1/4 tsp ginger

  • (Optional) 2-3 tbsp raisins

  • For the topping
  • 4 oz (120 gr) cream cheese at room temperature

  • 2 tbsp (30 gr) yogurt

  • 2 tbsp (40 gr) honey

  • 1/2 tsp cinnamon

Directions

  • Preheat your oven at 360F (180C) and brush your muffin tin with oil (or use silicon inserts)
  • In a mixing bowl, crack the eggs, add the honey and mix well to fluff the eggs
  • Add the milk and olive oil and mix
  • Add the flour, oats, baking powder and spices and mix to incorporate
  • Fold in the raisins and walnuts
  • Add the carrots and mix
  • Place the batter in the muffin tin and bake for 35 min or until golden and a toothpick gets in and out clean
  • For the topping
  • Whisk all the ingredients
  • When the muffins has completely cooled, spread the topping on top of them
