Its 9PM and I just realize that tomorrow they will be serving cake at Panos’ school! If you follow me on Instagram @panoseats you will know by now that I like to send food for my kids to school for numerous reasons which we can discuss in another post. So I wanted to bake a quick, easy and healthy cake that Panos would enjoy. This is how I came up with this super easy and moist yogurt orange loaf cake recipe. You will need just one bowl and less than 10 min to prepare it! So, let’s get into baking, shall we?
What you will need and substitutions
- Yogurt. I used plain non-Greek yogurt. You can use any dairy-free yogurt of your choice if you want to keep this dairy-free. The consistency of the yogurt should be runny and not so thick as Greek.
- Eggs. I always like to use pasture raised organic eggs as I believe that the animals get treated the way that they should be in the pastures. You can use what you have on hand.
- Honey. You can substitute with maple syrup if this is what you have on hand.
- Oil. I used coconut oil but you can substitute with olive oil or avocado oil or even grass-fed butter or ghee. However, I feel that the coconut oil helps to keep this extra moisture inside.
- Oranges. You will need just the zest of the oranges but this is enough to give a beautiful aroma in the cake. Just make sure that the oranges that you pick are not waxed.
- Flour. I used a combination of whole wheat pastry flour and all purpose flour. You can use just one of the two.
- Baking Powder. Always I choose aluminum-free baking powder.
HOW I SERVED IT
On Panos eco-friendly Bubba-Boo Bamboo Panda plate, I served this easy and moist yogurt orange loaf cake along with plain sheep yogurt and oranges. Panos absolutely loved this cake. The next day I even turned this cake into French toast. What a hit!

HOW TO STORE IT
This cake is amazing for batch cooking and meal prep. You can store it
- in your counter in an airtight container for up to 3 days or
- in your freezer in freezer friendly containers for up to 3 months for a quick dessert or healthy snack. When you are ready to eat them, take out as many pieces as you want and defrost them in the fridge in an airtight container or in the microwave on the defrost cycle.

Easy and moist yogurt orange loaf cake

1 cup (255gr) plain yogurt (non Greek)
3 eggs
1/3 cup (70 gr) coconut oil, melted
ยฝ cup (180 gr) raw honey
1 cup (150 gr) whole wheat pastry flour
1 cup (150 gr) all purpose flour
Zest of 2 small oranges
2 tsp baking powder
Directions
- Preheat the oven at 360F (182.22 degrees Celsius) and oil a silicon loaf pan
- In a mixing bowl, froth up the eggs with the honey
- Mix in the yogurt, coconut oil and orange zest
- Add the dry ingredients (the flours and baking powder). Make sure that you shift them
- Mix to incorporate but not overmix
- Place the batter in the loaf pan and bake for 55-70 min (depends on the oven) or until a toothpick comes out clean if you place it in the center of the cake
