Easy and nourishing spiced Greek lentil curry

If you are looking for a comforting meal then this easy and nourishing spiced Greek lentil curry is the best option! This is a traditional dish named fakes but with a couple of twists as I always like to slightly change the recipes that my grandma passed me down. So let’s get started!

What you will need

  • Lentils. You can make this with green or brown lentils.
  • Vegetables. Traditionally Greek lentil soup doesn’t contain so much vegetables. But I find that when I add extra vegetables in this curry, it tastes even better. And this dish is so versatile! In the summer I actually add extra peppers and zucchini. So you can play around with the vegetables and add what you like the most.
  • Spices. This is the secret to the most delicious lentil curry. The flavors of oregano, yellow curry, pepper and cumin give this soup a delicious taste.
  • Pantry staples: Tomato puree and olive oil

How to prepare your lentils

I like to soak the lentils overnight in water. The next morning I drain and keep them in the strainer covered with a kitchen towel. Every few hours I stir them and sprinkle with a tiny amount of water. And I keep doing this for a full day. This process is called sprouting and it helps with digestion.


Of course, sprouting is not necessary to do. If you don’t have time or energy you can just soak the lentils overnight. What it helps me time wise is to soak and sprout lentils in big batches and store in the freezer in freezer bags. So when you want to cook this soup you just take out from the freezer the amount of lentils that you want! How cool is that?

How to make this in the instant pot

If you are in a hurry you can make this in your instant pot very easily! You can follow the exact same recipe and instructions but you only need to cook this for 5 min on your instant pot. And this is actually what I do the most of the times the days that I want a fast and delicious meal for dinner.

How I served it

I like to serve lentils with a drizzle of olive oil and apple cider vinegar. On the side I always serve a grain, usually quinoa or barley and veggies. Today I topped this easy and nourishing spiced Greek lentil curry with celery and peppers. And of course some feta cheese!

How to store

You can store this easy and nourishing spiced Greek lentil curry in your fridge in airtight container for up to 3 days. But if you want to have a make-ahead meal then you can freeze this delicious curry in freezer friendly containers for up to three months. My freezer always have some! And you can either freeze the whole batch for the whole family to enjoy or you can even freeze individual portions for your little ones.

Nourishing spiced Greek lentil soup

Ingredients

  • 1 lbs (0.45 kilograms) green or brown lentils, soaked in water overnight

  • 4 tbsp extra virgin olive oil, plus extra to drizzle on the plate

  • 1 small onion, diced

  • 3 carrots, 2 shredded and 1 diced

  • 2 celery sticks, diced

  • 2 cloves garlic, minced

  • 1.5 cups tomato purée

  • 2 bay leaves

  • 1 tsp cumin

  • 1 tsp oregano

  • 1 tsp yellow curry powder

  • pepper to taste

  • (Optional) 1 tsp apple cider vinegar per serving before you serve

Directions

  • Over medium heat, sauté the onion and garlic on olive oil until fragrant
  • Add the spices and stir until fragrant
  • Add the rest of the ingredients and stir well
  • Add water to cover the lentils and simmer on medium heat for ~30 min or until the lentils are done
