Easy baby friendly banana bread muffins

Ingredients

  • 3 medium size bananas

  • 3 eggs

  • 1/3 cup olive oil 75 gr

  • 1/3 cup milk of choice 75 gr

  • 2 tsp baking powdere

  • 1/4 tsp baking soda

  • 1/2 tsp cinnamon

  • 2 cups pastry whole wheat flour 270 gr

  • (Optionally) 1/3 cup chocolate chips – omit for little children


Directions

  • Preheat your oven at 365F (185 degrees Celsius) and grease a baking muffin tin
  • In a mixing bowl, mash the bananas
  • Add the eggs to whisk until fluffy
  • Add the olive oil, milk and whisk to incorporate
  • Add the baking powder, baking soda, cinnamon and flour and mix to incorporate. Do not over mix
  • If you are adding chocolate chips, fold them in the batter. Note: omit for little children
  • Place the batter in your muffin tin and bake for 30 min or until a toothpick comes out clean
