Easy blueberry lemon waffles without sugar

Ingredients

  • 1 banana

  • 2 eggs

  • 3/4 cup milk of choice (180 gr)

  • 1/2 cup Greek yogurt (140 gr)

  • 1 ¼ cup whole wheat flour (175 gr)

  • 1 tsp baking powder

  • zest of a lemon

  • 1/2 cup blueberries


Directions

  • In a mixing bowl, mash the banana
  • Add the eggs, milk and yogurt and whisk to combine
  • Add the zest, baking powder and flour and mix to combine
  • Fold in the blueberries
  • Cook your waffles in your waffle iron on medium heat
