Apples! Its Fall again and there is nothing more perfect than a warming and delicious apple pie cake! If you dont know what this is, then you are missing out! It’s a cake with all the aromas of a traditional apple pie. And it only takes 30 minutes to bake! Traditionally in Greece, this cake is made with regular white flour and sugar but my version is gluten free and has no refined sugars. It is perfect for toddlers and kids, so easy to make and delicious! I love to pack a piece into the kids’ lunchboxes but also its perfect for a nice Sunday breakfast. So let’s get into baking!

What you will need

  • Apples. The star of the show! I used Gala apples as I like their texture on baking but you can use any apples that you like.
  • Yogurt. I used full fat plain Greek yogurt as it give the perfect moisture to this cake. If you want to keep this apple pie cake dairy free then you can use any non-dairy yogurt that you like.
  • Oats. Rolled or even quick oats will do for this easy gluten free apple pie cake. You will need to blend them to sand like consistency, no need to be perfect.
  • Eggs. I like to use pasture-raised eggs as I feel that the animals get treated better in the pastures but feel free to use any eggs that you have on hand.
  • Honey. You can use either honey or maple syrup in this recipe. I used just 1/2 a cup but if you want it even sweeter you can add up to 1/4 cup more. But don’t forget that you can always drizzle some honey on top before you serve it!
  • Olive oil. Or you can use any cooking oil that you have on hand.
  • Baking essentials: Spices and aluminum-free baking powder as a rising agent.

How to store it

This easy gluten free apple pie cake is amazing for batch cooking and meal prep. You can store it

  • in your counter in an airtight container for up to 3 days or
  • in your freezer in freezer friendly containers for up to 3 months for a quick dessert or healthy snack. When you are ready to eat them, take out as many pieces as you want and defrost them in the fridge in an airtight container or in the microwave on the defrost cycle.
