Easy gluten free chocolate banana oat cake

3 ripe bananas
3 eggs
1/2 cup (110 gr) olive oil
1/4 cup (45 gr) milk of choice
2 cups (240 gr) rolled oats
1/2 cup (60 gr) 100% cocoa powder
1 tbsp (8 gr) baking powder
(Optionally) Dark chocolate chips
Directions
- Preheat your oven at 360F and line a 8 inches round baking sheet with parchment paper
- In a bowl mash the bananas with the fork
- Add the eggs and whisk well
- Add the olive oil and milk and whisk
- In a blender, blend the oats to sand like consistency
- Add the blended oats, cocoa powder and baking powder to the mixture and mix
- (Optionally) Add chocolate chips
- Place the batter into the baking sheet and bake for 35 min or until a toothpick comes out clean when you place it in the middle of the cake
