Easy kid-friendly broccoli balls with oats

Ingredients

  • 1 broccoli head (450 gr), steamed until fork tender

  • 1 medium size sweet potato (250 gr), steamed until fork tender

  • 1/2 medium sized onion, steamed until fork tender

  • 1.5 cups quick oats (120 gr)

  • 1.5 cups feta cheese (400 gr), crumbled

  • 2/3 cups cheddar cheese (180 gr), shredded

  • 2 tbsp mint, finely chopped

  • Pepper to taste

Directions

  • Preheat your oven at 380F (190C) and line a baking sheet with parchment paper
  • Finely chop all the steamed vegetables (broccoli, sweet potato and onion) with your blender or a knife
  • Place the veggies in a bowl and add the rest of the ingredients
  • Mix to incorporate and form balls in the size of ping pong ball
  • Place the balls in the baking sheet and bake for 40 min (turn them at 30 min) or until golden
