minutesThose savory muffins are so easy to make and they are packed with vegetables! They are the perfect snack for kids and great for lunchboxes!
Ingredients
2 eggs
1 cup milk (240 gr)
1/4 cup olive oil (60 gr)
1 cup shredded cheddar (120 gr) + extra for topping
1/2 cup shredded zucchini (120 gr)
1/2 cup shredded carrot (75 gr)
1/4 cup shredded pepper (40 gr)
1 1/2 cups whole wheat flour (210 gr)
1 tbsp baking powder
1 tsp oregano
Pepper to taste
Directions
- Preheat your oven at 360F (182.22 degrees Celsius) and grease a muffin tin
- In a mixing bowl, add the eggs, milk and olive oil and stir to combine
- Add the cheese to the mixture and set aside
- Place the shredded vegetables in a clean towel and squeeze out any access liquid
- Add the vegetables, flour, baking powder, oregano and pepper in the mixture and stir to combine
- Place the mixture in the muffin tin and (optionally) top with some extra cheese
- Bake for 22-25 min or until golden
