Those savory muffins are so easy to make and they are packed with vegetables! They are the perfect snack for kids and great for lunchboxes!


  • 2 eggs

  • 1 cup milk (240 gr)

  • 1/4 cup olive oil (60 gr)

  • 1 cup shredded cheddar (120 gr) + extra for topping

  • 1/2 cup shredded zucchini (120 gr)

  • 1/2 cup shredded carrot (75 gr)

  • 1/4 cup shredded pepper (40 gr)

  • 1 1/2 cups whole wheat flour (210 gr)

  • 1 tbsp baking powder

  • 1 tsp oregano

  • Pepper to taste


  • Preheat your oven at 360F (182.22 degrees Celsius) and grease a muffin tin
  • In a mixing bowl, add the eggs, milk and olive oil and stir to combine
  • Add the cheese to the mixture and set aside
  • Place the shredded vegetables in a clean towel and squeeze out any access liquid
  • Add the vegetables, flour, baking powder, oregano and pepper in the mixture and stir to combine
  • Place the mixture in the muffin tin and (optionally) top with some extra cheese
  • Bake for 22-25 min or until golden
