2 pounds (900 gr) eggplants, cut in cubes
1 onion, cut in cubes
1 garlic clove, minced
1/4 cup (40 gr.) olive oil
1 carrot, shredded
1 egg
2 tbsp mint, finely chopped
2 tbsp parsley, finely chopped
1/2 pound (250 gr.) feta cheese, crumbled
1 cup (150 gr.) all purpose flour
1 1/2 cup (120 gr.) quick oats
1 tbsp (9 gr.) baking powder
1 tsp oregano
Pepper to taste
Directions
- Preheat your oven at 380F (180C) and line a baking sheet with parchment paper
- Sauté the eggplants, onion and garlic on the olive oil over medium heat until soft stirring well. Around 10 min.
- Blend the sautéed vegetables and transfer to a bowl
- Add the shredded carrot, egg, feta, oregano, pepper, flour and oats
- Stir well to incorporate
- With an ice-cream scoop or a spoon, scoop the batter and place in the lined baking sheet
- Bake for 25 min, turn the Pattie’s and bake for 15 more min or until golden
