Ingredients

  • 2 pounds (900 gr) eggplants, cut in cubes

  • 1 onion, cut in cubes

  • 1 garlic clove, minced

  • 1/4 cup (40 gr.) olive oil

  • 1 carrot, shredded

  • 1 egg

  • 2 tbsp mint, finely chopped

  • 2 tbsp parsley, finely chopped

  • 1/2 pound (250 gr.) feta cheese, crumbled

  • 1 cup (150 gr.) all purpose flour

  • 1 1/2 cup (120 gr.) quick oats

  • 1 tbsp (9 gr.) baking powder

  • 1 tsp oregano

  • Pepper to taste

Directions

  • Preheat your oven at 380F (180C) and line a baking sheet with parchment paper
  • Sauté the eggplants, onion and garlic on the olive oil over medium heat until soft stirring well. Around 10 min.
  • Blend the sautéed vegetables and transfer to a bowl
  • Add the shredded carrot, egg, feta, oregano, pepper, flour and oats
  • Stir well to incorporate
  • With an ice-cream scoop or a spoon, scoop the batter and place in the lined baking sheet
  • Bake for 25 min, turn the Pattie’s and bake for 15 more min or until golden
