Easy veggie chicken meatballs

Ingredients

  • 1 pound (0.45 kilograms) boneless and skinless chicken thighs

  • 1 medium sized carrot

  • 1 medium sized zucchini

  • 1 egg

  • 2 tbsp olive oil

  • 2 tbsp tomato puree

  • 2 tbsp mint, finely chopped

  • 1/2 cup breadcrumbs

  • 1 tsp oregano

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • salt and pepper to taste


Directions

  • Preheat your oven at 400F (204.44 degrees Celsius) and line a sheet pan with parchment paper
  • In your blender, blend the chicken. Alternatively you can use ground chicken and you can skip this step.
  • In a mixing bowl, add all the ingredients and mix to incorporate
  • Form meatballs in the size of a ping pong ball and place in your sheet pan
  • Bake for 30 min or until golden
