1 pound (0.45 kilograms) boneless and skinless chicken thighs
1 medium sized carrot
1 medium sized zucchini
1 egg
2 tbsp olive oil
2 tbsp tomato puree
2 tbsp mint, finely chopped
1/2 cup breadcrumbs
1 tsp oregano
1/2 tsp paprika
1/2 tsp garlic powder
salt and pepper to taste
Directions
- Preheat your oven at 400F (204.44 degrees Celsius) and line a sheet pan with parchment paper
- In your blender, blend the chicken. Alternatively you can use ground chicken and you can skip this step.
- In a mixing bowl, add all the ingredients and mix to incorporate
- Form meatballs in the size of a ping pong ball and place in your sheet pan
- Bake for 30 min or until golden
