Easy zucchini oat cake

Ingredients

  • 1 cup zucchini, shredded, squeezed and packed (250 gr)

  • 3 eggs

  • ½ cup plain Greek yogurt (125 gr)

  • ½ cup oil (olive or coconut) (110 gr)

  • ½ cup honey or maple syrup (160 gr)

  • 2 3/4 cups rolled oats (325 gr)

  • 1 tbsp baking powder

  • 1/4 cup chocolate chips


Directions

  • Preheat your oven at 360F (182.22 degrees Celsius) and line an 11×8 inches (20.32 centimetres) baking sheet with parchment paper
  • In a mixing bowl whisk all the wet ingredients (eggs, oil, yogurt, honey)
  • In your blender, blend the oats to sand like consistency
  • Add the oats and baking powder to the mixture and mix
  • Squeeze the zucchini with your hands and discard the liquid
  • Add the zucchini and chocolate chips in the mixture and mix
  • Pour the mixture into the baking sheet and bake for 35-40 min or until golden
