1 cup zucchini, shredded, squeezed and packed (250 gr)
3 eggs
ยฝ cup plain Greek yogurt (125 gr)
ยฝ cup oil (olive or coconut) (110 gr)
ยฝ cup honey or maple syrup (160 gr)
2 3/4 cups rolled oats (325 gr)
1 tbsp baking powder
1/4 cup chocolate chips
Directions
- Preheat your oven at 360F (182.22 degrees Celsius) and line an 11×8 inches (20.32 centimetres) baking sheet with parchment paper
- In a mixing bowl whisk all the wet ingredients (eggs, oil, yogurt, honey)
- In your blender, blend the oats to sand like consistency
- Add the oats and baking powder to the mixture and mix
- Squeeze the zucchini with your hands and discard the liquid
- Add the zucchini and chocolate chips in the mixture and mix
- Pour the mixture into the baking sheet and bake for 35-40 min or until golden
