After the big success of my carrot cake oatmeal cookies, which by the way you need to try if you haven’t already, I wanted to turn them into oat bars. I just love carrot cake anything and those oat bars are great to expose our little ones to spices’ flavors. And what a better way to turn them into a no-bake version! If you follow me on social media you will know by now that my oven is broken for more than a month now so I had to get creative. Without any further ado, I bring to you the most delicious no bake easy and aromatic carrot cake oat bars! Let’s get into baking, shall we?
What you will need
- Carrots. You need to finely shred the carrots and make sure that you measure it shredded.
- Oats. I used gluten-free rolled oats. You can use either rolled oats or even quick oats. However, I would not recommend using oat flour or steel cut oats.
- Almond butter. I feel like almond butter is the perfect nut butter for this recipe as it accompanies great the rest of the flavors. Of course you can use any nut butter of your choice. If you want to keep this nut-free you can substitute with sunflower butter (and omit the walnuts of course). I have done this a lot of times and the final results is still delicious!
- Honey. This is the main sweetener of those bars. Of course you can substitute with maple syrup.
- Carrot cake staples: walnuts, raisins, spices.

Tips to perfection
- If you are serving an infant less than one year, you should avoid honey. Instead you can use maple syrup or even applesauce.
- Also, make sure that you finely crush the walnuts as they can be choking hazard for young kids.
- You can keep those in the fridge for up to 3 days in an air tight container. I doubt that they will last that long though.
- Those no bake easy and aromatic carrot cake oat bars are perfect for a quick and nutritious snack, suitable for school lunchboxes and snackboxes. Also, they are great for a birthday party buffet or for a quick treat to bring to school for your kid’s birthday.
The Dip
I decided to serve those no bake easy and aromatic carrot cake oat bars with a delicious cream cheese dip. Just blend all the ingredients together and you will have a perfect dip to serve on the side for a more nutritionally complete snack. Or even better you can spread this on top of the bars. The combination is really delicious!

2 cups rolled oats
ยฝ cup almond butter
ยผ cup honey
ยฝ cup shredded carrots
ยผ cup crushed walnuts
2 tbsp raisins
ยพ tsp ground cinnamon
ยผ tsp ground cloves
ยผ tsp ground nutmeg
Directions
- In a mixing bowl, mix well all the ingredients
- Line a small baking sheet with parchment paper
- Place the mixture in the baking sheet and press down
- Refrigerate at least for 4 hours or overnight
