Are you looking for an easy to make and delicious breakfast? I have the solution! Simple strawberry baked oat bars, perfect for this time of the year where strawberries are on their pick. And also those oat bars are the best make-ahead breakfast! Just simply bake it the night before and you will have a great breakfast waiting for you in the morning! So, let’s get into baking!

What you will need

  • Oats. Well you can’t make oat bars without oats, right? In this recipe we will bake the oats in the oven and they will get to absorb all the liquids and get delicious!
  • Strawberries. The star of the show! I love strawberries this time of the year! They are so perfectly tangy and sweet on the same time. When the strawberries get baked, they release extra juices. So, they will add moist on this dish and of course extra flavor.
  • Coconut. Did you know that coconut and strawberries are best friends? No? Well, they are! I used unsweetened shredded coconut.
  • Milk. You can use any milk of your choice. If you want to keep this dairy-free I would recommend coconut milk or almond milk.
  • Honey. To add a little sweetness in those baked oat bars. If you are serving this to a baby, I would recommend to just mush ½-1 banana instead of honey. Don’t forget that honey is not allowed for babies less than one year old.
  • Eggs. I like to use pasture raised eggs as I feel that the animals get treated better in the pastures. Please feel free to use what you have on hand.

What kind of oats should I use?

For this recipe rolled oats will work the best because the will absorb the liquids perfectly and the final dish will be soft but still easy to cut and serve as a piece. You could use quick oats in the same amount but you should use less milk otherwise the oat bars will be mushy. I will not recommend oat flour or steel cut oats for this recipe.

Can I use any other fruit?


Absolutely! You might need to readjust the honey portion based on which fruit you will use. Great on this recipe would be any kind of berries, like blueberries, blackberries, raspberries. Or a combination of them! Or mangoes, peaches or pineapple are great options and go perfectly with coconut, in case you want something more tropical!

How to store

Those simple strawberry baked oat bars are best freshly out of the oven but if you want to make this breakfast ahead of time you can totally do this. I have baked those oat bars the night before and then once cooled I stored them in an airtight container in the fridge. The next morning we have a perfect breakfast waiting for us! You can enjoy it in room temperature but I will highly recommend it to reheat it. You can store those simple strawberry baked oat bars in your fridge for up to 3 days.

So easy to make and delicious strawberry oat bars, perfect for a make-ahead breakfast or a quick snack

Ingredients

  • 2 eggs

  • 2.5 cups rolled oats

  • 1.5 cups milk of your choice

  • 1.5 cups strawberries, diced

  • ¼ cup honey

  • ½ cup shredded coconut

Directions

  • Preheat the oven at 360F (182.22 degrees Celsius) and line with parchment paper an 8”x8” baking sheet pan
  • In a mixing bowl, mix all the ingredients to incorporate
  • Place in the baking sheet pan and bake for 25-30 min or until golden brown
  • Let it cool completely before you cut into pieces
