ยฝ cup pumpkin puree
3 eggs
ยฝ cup maple syrup
ยผ cup coconut oil
ยผ cup milk of choice
1 ยผ cup whole wheat flour (175gr)
1 tbsp baking powder
1 tsp cinnamon
ยผ tsp cloves
- For the buttercream
4 tbsp cream cheese
1 tbsp butter
1 tbsp maple syrup
Directions
- Preheat your oven at 360F (182.22 degrees Celsius) and grease a muffin tin with some oil
- In a mixing bowl beat the eggs (with a hand mixer or stand mixer or a whisk) until fluffy
- Add the pumpkin puree, oli, milk and maple syrup and whisk to incorporate well
- Add the spices and baking powder and whisk
- Shift the flour and add in the wet ingredients, stir until is well incorporated. Do not over stir
- Place the batter in the muffin tin and bake for 25 min or until a toothpick comes out clean if you poke the center of the muffin
- Let them cool 10 min in the muffin tin and then transfer in a cooling rack to cool completely
- Save in an airtight container in your counter for up to 3 days or freeze in a freezer container up to 3 months
- For the buttercream
- Whisk all ingredients together
- Place with a spatula or spoon on top of the muffins when they are cool
