The best kid friendly easy pumpkin muffins

  • ½ cup pumpkin puree

  • 3 eggs

  • ½ cup maple syrup

  • ¼ cup coconut oil

  • ¼ cup milk of choice

  • 1 ¼ cup whole wheat flour (175gr)

  • 1 tbsp baking powder

  • 1 tsp cinnamon

  • ¼ tsp cloves

  • For the buttercream
  • 4 tbsp cream cheese

  • 1 tbsp butter

  • 1 tbsp maple syrup


  • Preheat your oven at 360F (182.22 degrees Celsius) and grease a muffin tin with some oil
  • In a mixing bowl beat the eggs (with a hand mixer or stand mixer or a whisk) until fluffy
  • Add the pumpkin puree, oli, milk and maple syrup and whisk to incorporate well
  • Add the spices and baking powder and whisk
  • Shift the flour and add in the wet ingredients, stir until is well incorporated. Do not over stir
  • Place the batter in the muffin tin and bake for 25 min or until a toothpick comes out clean if you poke the center of the muffin
  • Let them cool 10 min in the muffin tin and then transfer in a cooling rack to cool completely
  • Save in an airtight container in your counter for up to 3 days or freeze in a freezer container up to 3 months
  • For the buttercream
  • Whisk all ingredients together
  • Place with a spatula or spoon on top of the muffins when they are cool
