2 cups shredded carrots (200 gr)
3 eggs
ยฝ cup plain Greek yogurt (125 gr)
ยฝ cup oil (olive or coconut) (110 gr)
ยฝ cup honey or maple syrup (160 gr)
2 3/4 cups rolled oats (325 gr)
1 tbsp baking powder
2 tsp cinnamon
1/2 tsp grounded cloves
- Optional
ยผ cup walnuts, crushed (30 gr)
ยผ cup raisins
- For the topping
12 oz (340.19 grams) cream cheese in room temperature
1/3 cup honey
1 tbsp cinnamon
Directions
- Preheat your oven at 360F (182.22 degrees Celsius) and line an 11×8 inches (20.32 centimetres) baking sheet with parchment paper
- In a mixing bowl whisk all the wet ingredients (eggs, oil, yogurt, honey)
- Add the carrots, baking powder, spices, walnuts and raisins and mix well
- In your blender, blend the oats to sand like consistency
- Add the oats to the mixture and mix to incorporate
- Pour the mixture into the baking sheet and bake for 35-40 min or until golden brown
- For the topping
- In a mixing bowl, whisk the cream cheese, honey and cinnamon
- When the cake is cool completely, spread the cream cheese toping on top
