The best kids friendly strawberry salad

Strawberries in your savory salad? Yes! And trust me there is a reason that this salad gets the title of the best kids friendly strawberry salad! Perfectly sweet and tangy and you can turn it into a full meal if you pair it with the feta cheese croutons! Ready from start to finish within 15 min, this salad is great as a quick family dinner!

The salad

This kids friendly strawberry salad is full of fresh in season ingredients. I feel that all the ingredients are picked in such a way to pair each other perfectly and I would actually not recommend any substitutions. Strawberries are in their pick right now and they are perfectly sweet and tangy. And definitely they are the star of this salad. The avocado pairs nicely with the strawberries and it adds a good amount of healthy fats and creaminess. For extra crunch and freshness, I added diced cucumbers and red onion. If your little ones are not into spicy flavors then you can substitute the red onions with green onions or sweet white onions. And off course some corn for a pop of yellow and mint for extra flavor.

The dressing

Well, it will not be a salad at Panos Eats high standards, if we were missing the dressing right? In this salad you can use my classic balsamic vinaigrette but if you want to upscale to the next level, I highly recommend my strawberry balsamic vinaigrette. Simply blend all the ingredients together in a small blender. If you dont have a blender, grate the strawberries and then mix all the ingredients in a glass jar.

The feta cheese croutons

One word can describe those cheesy and delicious feta croutons: perfection! Crispy in the outside and soft in the inside. I chose to cut the feta cheese into circles using my cute little veggie cutter but please feel free to cut into squares with your knife. And then I treated as a nugget, dip it in egg wash and breadcrumbs. I used whole wheat breadcrumbs but if you want to keep this gluten-free then you can use oats blended in your blender down to breadcrumbs consistency.

How to store

You can prepare all the elements of the salad and store in your fridge in an air tight container. Keep in mind that avocado might turn brown if you cut it. To avoid this, gently brush with a few drops of lemon juice before you add it in the salad. Then when you are ready to enjoy the salad, add the dressing and give it a toss. This way your salad will not get soggy.

If you want to pack this salad in your kid’s lunchbox, make sure that you pack the vinaigrette separately. When lunch time comes, your kid can just pour the vinaigrette and enjoy the salad.
