2 eggs, in room temperature
1/4 cup orange juice (65 gr)
1/4 cup milk (65 gr)
1/4 cup olive oil (55 gr)
1/4 cup maple syrup or honey (75 gr)
Zest of an orange
1 1/2 cup whole wheat flour (210 gr)
2 tsp baking powder
1/4 tsp baking soda
(Optional) 1/4 cup chocolate chips
Directions
- Preheat your oven at 360 F (182.22 degrees Celsius) and grease your muffin tin
- In a mixing bowl, whisk the eggs and the maple syrup until frothy
- Add the milk, olive oil and zest and whisk
- Add the whole wheat flour and baking powder and mix to incorporate. Donโt over mix. The dough will be dense at this point
- In a small bowl, mix the orange juice and baking soda and immediately add it to the batter
- Mix to incorporate. Do not over mix
- (Optional) If you add chocolate chips, fold them in the batter
- Fill up your muffin tin until 3/4 full
- Bake for 25 min
